Ingredients:
- 1 lb. Italian sausage
- 1 c. chopped onions
- Garlic to taste
- 6 c. beef broth
- ½ c. water
- 2 c. tomatoes, chopped
- ½. t. basil
- ½ t. oregano
- 8 oz. tomato sauce
- 1 ½ c. zucchini, cubed
- 3 T. parsley
- grated parmesan cheese
Directions:
- Brown sausage and onions; drain fat, if necessary.
- Add garlic, broth, water, tomatoes, basil, oregano and tomato sauce. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add zucchini and parsley. Simmer covered for an additional hour.
- Sprinkle cheese on each serving.
