Ingredients: 

  • 1 lb. Italian sausage
  • 1 c. chopped onions
  • Garlic to taste
  • 6 c. beef broth
  • ½ c. water
  • 2 c. tomatoes, chopped
  • ½. t. basil
  • ½ t. oregano
  • 8 oz. tomato sauce
  • 1 ½ c. zucchini, cubed
  • 3 T. parsley
  • grated parmesan cheese

 

Directions:

  1. Brown sausage and onions; drain fat, if necessary.
  2. Add garlic, broth, water, tomatoes, basil, oregano and tomato sauce.  Bring to a boil.
  3. Reduce heat and simmer for 30 minutes.
  4. Add zucchini and parsley.  Simmer covered for an additional hour.
  5. Sprinkle cheese on each serving.
